Directions
Trim lemongrass ends, chop and pound vigorously until bruised
Mix lemongrass stalk, ginger, fish sauce, bay leaf, apple sauce, five-spice powder, and curry powder in bowl
Add beef and toss in mixture until coated
Store in refrigerator and let marinate for about 30 minutes
Set oven to 300°F
Discard excess marinade from beef, reserving bay leaf and lemon grass
Cook beef until in melted clarified beef, using a Dutch oven
Transfer beef to plate
Add onions and cook until soft
Stir in salt and tomatoes and simmer until mixture is thickened
Combine beef, reserved bay leaf and lemongrass, and paste
Increase oven heat to medium and cook for about 5 minutes, stirring regularly
Add in carrots and water, and bring mix to boil
Seal and cook in oven for about 2 ½ hours, until beef is done
Garnish the stew with cilantro
